Assamese Fish Curry with bamboo shoots by Rumi Mahanta Dutta.
Assamese Fish curry
Today let us learn a very simple Assamese Fish curry by an expert in Assamese Cuisine. I will let her take over and introduce the recipe.
Hello, I am Rumi Mahanta Dutta, a food blogger based on Dibrugarh, Assam. Here in this Guest post, I am going to share a simple Assamese fish curry recipe. Assam’s love for fish is legendary. We Assamese people generally eat sour fish curries “the famous Assamese Masor Tenga” There are different sour ingredients found in Assam to make fish curries such as Outenga (elephant apple), mosondori (Polygonum microcephalum), thekera (garcinia pedinculata), kaji nemu (Assam lemon), khorisa (fermented bamboo shoots ), etc. But as these ingredients may not be available in other parts of India, I am going to share a simple fish curry with bamboo shoots. Here I am using fermented bamboo shoots. We prepare and preserve bamboo shoots in bottles to ferment. But you can also use canned bamboo shoots available in the market.
INGREDIENTS:
• 2 Medium sized whole fish or 4 pieces of big fish (any)
• 1/2 cup fermented bamboo shoot
• 1 onion chopped
• 1 tomato chopped (optional)
• 2-3 cloves of garlic chopped
• 1 piece ginger chopped
• 2 green chilies chopped or whole
• 1/2 tbsp turmeric powder
• 1/2 tbsp red chili powder
• 2 tsp mustard oil
• salt to taste
METHOD:
Take any fish big or small. Here I have given two pictures of this recipe. First one is of medium-sized freshwater fish found in my place and the second one is of big pieces of rohu fish. ( you can use any fish of your choice )
Wash fish pieces under running water. Rub with salt and turmeric powder. In a pan heat oil. Fry fish pieces. Drain and keep aside.
In the remaining oil add chopped ginger, garlic, and onion. Add chopped tomatoes. Fry till translucent. Add turmeric and red chili powder. Stir and add fermented bamboo shoot and chopped or whole green chilies. Add water and bring to boil. Stir it well to combine.
Add fish pieces and salt and cover the pan. Cook in medium heat for 5 minutes.
Remove from heat. Serve Assamese Fish curry piping hot with rice.
