Grandmother’s Recipe for Ghee

Growing up, in a food-loving family, I always observed the generous use of ghee in all the dishes which were cooked in our household. My grandmother safeguarded the tin of ghee under lock and key. It was used only in her presence. Ghee was also prepared at home with the fats and cream of the milk. It is the clarified butter that is prepared from thick cream by constantly stirring, it solidifies and separates from the milk. Then it is further cooked on the fire. The oily thick liquid that is extracted is nothing but the pure ghee. Ghee is prepared in practically all traditional Indian households. Ghee was religiously prepared by hand once a week in my household. I still vividly remember scrapping the brown residue of milk solids that remained at the bottom of the pan after extracting the ghee.
